Moi Moi is a Nigerian delicacy made from steamed bean pudding. It’s a versatile dish that can be enjoyed on its own or with various fillings.
Moi Moi with corned beef and egg recipe combines the classic Moimoi with the rich flavours of corned beef and the protein-packed goodness of eggs for a truly satisfying meal.
Ingredients
500g peeled beans (Honey beans- Ewa Aganyin or drum beans walk better for it)
2 large onions (or use as many as you like)
2 red bell pepper (you can use one if you don’t fancy too much pepper in your dish)
2 Scotch bonnet pepper (or as many as you prefer)
1 ball of garlic (optional)
1 teaspoon ground crayfish (crayfish works magic in Moi Moi)
1 large Herring fish popularly known as Shawa (optional)
3-4 seasoning cubes (any brand you prefer is good to go)
Salt to taste
1 cup vegetable oil (use as per preference)
1 can corned beef
4-5 boiled eggs
Moimoi leaves (Ewe Iran) or Moi Moi plates (use anyone you’re comfortable with, but there is a special flavour you get when you use Ewe Iran).
